Cholesterol Cowboy Bean Dip

A variation on the usual layered dip, this one with black beans.

15 ounces (420 g) black beans

1/4 cup (40 g) finely chopped onion

2 tablespoons (28 ml) lime juice

1/4 teaspoon ground cumin

1/2 teaspoon finely chopped garlic

1/8 teaspoon black pepper

8 ounces (225 g) cream cheese, softened

1/4 cup (25 g) sliced scallions

1. Drain and rinse the beans.

2. Mix all ingredients except cream cheese and scallions.

3. Cover and refrigerate at least 2 hours.

4. Spread cream cheese on serving plate.

5. Spoon bean mixture evenly over cream cheese.

6. Sprinkle with scallions.

Yield: 12 servings
